Preparation of syrup

To make the coconut syrup, mix the water, coconut milk and coconut sugar together and heat everything over a medium heat.

Stir regularly until the sugar caramelizes and the mixture bubbles slightly.

Remove the syrup from the heat and leave to cool completely.

Froth the milk & brew the espresso.

Refine the espresso with the coconut syrup.

Pour the frothed milk into a tall glass and then pour the espresso and syrup mixture through the milk.

Add the desired topping and enjoy.
