Preparation
- Place the chopped peaches, basil leaves, lemon juice and honey or agave syrup in a blender.
- Blend everything on a high speed until the mixture is smooth and homogeneous.
- If desired, you can pass the mixture through a fine sieve to remove the solids and obtain a silkier drink.
- Pour the mixture into glasses over ice cubes until about half full.
- Now add the rum or gin to the alcoholic version.
- Fill the glasses with sparkling water and stir gently.
- Garnish with a basil leaf and perhaps a thin slice of peach.
